- 2 tbsp vegetable oil
- 2 cloves of garlic, minced
- 1 shallot, thinly sliced
- 1/2 cup tofu, cubed
- 1/2 cup shrimp (optional)
- 2 eggs, beaten
- 1 cup bean sprouts
- 2 green onions, chopped
- 1/4 cup crushed peanuts
- Lime wedges, for serving
- Fresh cilantro, for garnish
For the sauce:-
- 3 tbsp fish sauce
- 2 tbsp tamarind paste
- 1 tbsp soy sauce
- 1 tbsp brown sugar
- 1/2 tsp chili flakes (adjust to your spice preference)
Here's how to make Pad Thai:-
1. Cook the rice noodles according to the package instructions. Drain and set aside.
2. In a small bowl, whisk together the fish sauce, tamarind paste, soy sauce, brown sugar, and chili flakes. Set aside.
3. Heat the vegetable oil in a large pan or wok over medium-high heat. Add the garlic and shallot, and sauté until fragrant.
4. Add the tofu and shrimp (if using), and cook until the shrimp turns pink and is cooked through.
5. Push the ingredients to one side of the pan, and pour the beaten eggs into the empty space. Scramble the eggs until they're fully cooked.
6. Add the cooked noodles to the pan, followed by the prepared sauce. Toss everything together to evenly coat the noodles with the sauce.
7. Add the bean sprouts and green onions to the pan, and continue cooking for a few more minutes until the bean sprouts are slightly wilted.
8. Remove from heat, and garnish with crushed peanuts and fresh cilantro. Squeeze fresh lime juice over the top before serving.
9. Serve hot and enjoy your homemade Pad Thai!
